Doc’s Southern BBQ Opens this Week in Windham

Windham – A taste of the south is arriving in Windham this week, when Doc’s Southern BBQ opens its doors on Friday July 26th. The restaurant will feature baby back ribs, briskets, chicken, pulled pork, wings and other daily specials. The sides will have a southern flare, featuring okra, coleslaw, corn on the cob, BBQ baked beans and more. All served up with southern hospitality and an ice-cold glass of genuine southern sweet tea.

Jake Whetstone is the owner. He also owns and runs a highly successful Doc’s Southern BBQ Food Truck in Kent. He decided it was time to open a brick and mortar restaurant. When asked what made him choose Windham. Jake said, “The small town reminds him of the small town he grew up in Florida and feels like home.” Everyone has been so welcoming while he has been transforming the diner into a BBQ restaurant. He said social media has been all a-buzz about the restaurant and he is excited to be a part of the community.

The last few weeks, he has been busy transitioning the former Dixie’s Diner into Doc’s Southern BBQ. The diner has been open for breakfast and lunch, serving a lot of what was on the menu of Dixie’s Diner, but that will change once he is open for BBQ. In the evenings, when they were closed, he was working on the facility, so when it opens Friday July 26, 2019, it will be his vision of a BBQ place.

Jake is a veteran, so he naturally hired a former veteran that he served with, who went to culinary school and is now a chef. Chef Edgardo Delgado will run the kitchen and says controlling food cost is key. Set formulas for recipes and portion control will be a priority for keeping cost down and ensuring that the food taste the same on any given day. Edgardo will use locally-sourced food whenever possible and he will not use processed foods. All food preparations will be done on site. He said he will have non-BBQ entrees on the menu for those who are not BBQ fans.

The hours after July 25th will be 7am until 9 pm. Breakfast will be traditional breakfast foods that Dixie’s Diner offered along with a few traditional southern dishes added in as well. I heard the word grits! So, expect to see that on the menu. Therefore, all of the you who love southern food and BBQ this will be the place to be. I must add that their BBQ sauce is out of this world!

Their Grand Opening is Friday, July 26, 2019. They are offering a special drawing for anyone who comes in and has a meal on July 26th. Those who do, will be given a ticket to be entered in a drawing for a 5k Ultra Hi-Def television. The hours Friday will be 7am-9pm. Doc’s Southern BBQ is located in Windham, in the old Sparkle Plaza.
