Pumpkin Pizza

I think we are officially in “that” season… Pumpkin Everything!! Pumpkin latte, pumpkin pie, pumpkin beer, pumpkin pasta… the list of pumpkin items goes on and on. I know in last week’s column I said I would talk about the fermentation process that the grapes are going through but I had many guests this past week ask for some suggestions to get them through Pumpkin Season – so I’ll get back to the fermentation process next week and help a few of you through this transition.

My husband is a pizza fanatic so when we found a recipe for a pumpkin pizza we had to give it a try! Here’s what you’ll need:

• 1 ready to bake pizza dough

• 1 cup pumpkin puree

• 1 sweet onion, diced

• 1 tsp. sugar

• 2 cloves garlic, minced

• 1 shallot, diced

• 2 tsp. thyme

• salt and pepper to taste

• 1/2 cup freshly grated parmesan cheese

• 2 cups freshly grated havarti cheese

• 1 cup arugula

Preheat the oven to 350 F. On medium low heat caramelize half of the onions with a little bit of olive oil and white wine. Next mix the pumpkin puree, garlic, shallot, thyme, and the other half of the onion in a mixing bowl. Once combined add the parmesan cheese, salt and pepper to taste. Finally, follow the directions on the package for preparing the dough and top it with the pumpkin mixture. Add the arugula and grated Havarti cheese. Follow the directions on the pizza dough package for baking times.
